Semolina Porridge

Semolina has been known for centuries as a nourishing food for everyone but especiallyfor those with digestive issues. In Ayurveda it is also recognised as a good food for babies. Its key strength is its ability to make us feel comfortably full, not heavy and full for longer, preventing over-eating and snacking between meals. An ideal family breakfast that no one can resist which will leave everyone feeling nourished and wanting seconds!

Ingredients
Serves 1

1/4 cup semolina
1/2-1 tbsp ghee*
1 cup boiling water
1 cup milk** (non-homogenised)
1/4 tsp cardamom powder
1/4 tsp cinnamon powder
1 tbsp raw sugar
Handful of raisins

*rice bran or coconut oil are a good substitute
**if vegan or lactose intolerant, use water instead

Method

Heat ghee in saucepan. Add the semolina and gently cook it over low to medium heat for approximately 3-5 – until it starts to turn a pinkish brown and it leaves a pleasant smell (NB: stir it constantly so as to avoid burning)
Immediately add 1/2 cup boiling water but becareful to keep your hand away as the steam may burn. Mix well to avoid lumps and then add remaining boiling water and continue cooking.
Add the cardamom and cinnamon powders and continue to mix.
Add the 1 cup of non-homogenised milk and stir well and then add the raisins.
Stir continuously, cooking for another 3-5 minutes until the porridge thickens (thickish, soup-like consistency) and bubbles.
Place the lid on the saucepan and turn off the heat, allowing it cool for 5 minutes before serving.
