Masala Chai (tea)

Masala Chai (tea) – a personal favourite and a full-bodied tea makes for a great chai! Be sure to use black tea for this, and increase the recipe because one cup a day is never enough of this delightful warming, grounding and nourishing tea!
Ingredients
Serves 2
3 cups water
4 cardamom pods
3 cloves
1/2 stick cinnamon
1/2 inch ginger
1/4 tsp cardamom powder
pinch of nutmeg
1 black peppercorn
2 tsps raw sugar
2 cups milk* (non-homogenised)
*unfortunately, no other milk is recommended unless you make your own almond milk
Method
1. Add water and gingers to a small pot and place on heat.
2. When the water starts to bubble, add remaining spices.
3. Let the water boil for 2-3 minutes and then lower to a simmer for 10 minutes.
4. Add raw sugar and bring spiced water back to a boil.
5. Add black tea and reduce heat again to a simmer, for another 2-3 minutes.
6. Add the milk and bring it back to the boil – keep a close eye and be sure not to let the milk boil over.
7. Reduce the heat to a simmer once more for 10 minutes.
8. Serve hot into your favourite mug and enjoy!
Spices can be adjusted according to season e.g. less cinnamon and pepper in Summer and more in winter.
